hkclubbing.com: Coming from Montenegro, a country not widely known for its wine culture, how has your unique background shaped your approach to wine? What do you think makes your perspective stand out in Hong Kong's wine scene?
Stanko: The simplicity and sophistication rooted in Montenegrin culture greatly influence my approach to wine and food. Stanko: One of my most memorable pairing experiences was with Martell XO and blue cheese, showcasing my appreciation for Single Malts and Cognac. At Louise, our wine pairings are inspired by Julien Royer’s authentic cuisine, and we enjoy thinking outside the box when selecting wines to complement the dishes crafted by Julien and Loic.

Stanko: At Louise, we offer exceptional value for wines, featuring a diverse selection from smaller vineyards, prestigious wineries, and one of the most extensive collections of grower champagne in Hong Kong. Our wine list highlights exclusive vineyards, positioning us as leaders in the industry. Recent additions include esteemed Burgundy domaines like Leroy, Prieuré Roch, Arnoux Lachaux, and Domaine Romanée-Conti, further enhancing our commitment to unique and elevated dining experiences.
hkclubbing.com: Many people have misconceptions about wine. What's one myth about wine you often hear that you'd like to challenge for the HKClubbing audience?
Stanko: A common myth I encounter is the practice of putting ice in wine. We work hard to select quality wines, and adding ice dilutes the experience. I encourage guests to appreciate the wine as it is meant to be enjoyed.
hkclubbing.com: For wine novices in Hong Kong looking to expand their palates, what advice would you give to help them start their wine journey?
Stanko: My advice is to explore different wines and wine lists. Drink as much as you can to discover what you like and expand your palate.
hkclubbing.com: Outside of your work at Louise, what are some of your personal favorite wines or regions that you recommend to wine lovers exploring new tastes?
Stanko: I highly recommend trying Plantaze Premijer, a wine from Montenegro. It offers a unique experience and showcases the rich heritage of Montenegrin winemaking.
hkclubbing.com: If you could suggest one unexpected wine pairing that has surprised you and your guests, what would it be and why?
Stanko: I recently dined at Julien Royer’s restaurant in Singapore, where Shima Aji ‘Crudo’ paired with Due Punti Chardonnay from Hokkaido, Japan, impressed me. The whole experience was incredible, and I encourage others to visit and experience Julien Royer’s authentic cuisine.
hkclubbing.com: For those in Hong Kong wanting to get the most out of a wine tasting experience, what are some tips or steps you follow to truly appreciate and evaluate a wine?
Stanko: I advise guests dining at our restaurant to trust their sommelier. Our sommeliers have tasted and selected wines they are passionate about and enjoy sharing their knowledge with guests.
hkclubbing.com: If you had to choose a wine for different occasions, like a celebratory night out or a relaxed evening at home, what wines would you recommend for each?
Stanko: For a celebratory night out, I recommend a magnum of Cristal 2012, a perfect party champagne. For a relaxed evening at home, Domaine Jasmin 2021 Côte-Rôtie is a beautiful expression of Syrah that I enjoy.

Stanko: My favorite bar is Qura. It offers a complete package with a stunning view, charming and sophisticated decor, and an authentic beverage program. I also appreciate the recent addition of Jose Robayo to their team, which enhances the overall experience.
