
Hyatt Centric Victoria Harbour Hong Kong opens a new Chinese culinary destination — One Duck Lane (尚萃軒), located on the 2/F of the West Tower. The restaurant offers a wide selection from legendary Peking Duck to creative signature dishes, all with an elegant harbourside view.
The venue accommodates up to 130 guests with flexible configurations perfect for both intimate gatherings and grand celebrations. For those seeking exclusivity, the main private dining room seats up to 32 guests, while a dedicated Chef’s Table offers an intimate experience for 8. For diners who plan to enjoy their time with their fluffy kids, an adjoining outdoor garden terrace provides a unique setting for private events and dog-friendly dining.
The kitchen is led by renowned Hong Kong chef Jack Chan, serving signature Roasted Peking Duck, Chinese culinary classics, premium seasonal seafood, and artisanal dim sum. Chef Jack was previously Chinese Executive Chef at Sheraton Hong Kong’s Celestial Court, where he led the team to achieve seven consecutive One Diamond ratings by China’s prestigious Black Pearl Restaurant Guide.

The Signature "DUCK" Experience
Prepared using Hyatt’s legendary secret recipe, the Signature Roasted Peking Duck (HK$888 Whole / HK$448 Half) is a must-try experience. Ducks are raised for 45 days then air-dried for 72 hours before being roasted in a custom-built oven to achieve the dish’s famously crispy skin.
Guests can also enjoy it with classic condiments or the special Foie Gras & Truffle Parfait (HK$48) for a modern spin on this centuries-old tradition.
Be sure to add on the Poached Rice in Supreme Duck Soup (HK$188 for second course / HK$268 for a la carte order), which features diced duck meat, Shimeji mushroom, crispy rice, sea cucumber and bamboo pith in a light yet flavourful broth made with duck bones.

The Signature Cocktail Experience
Mala Punch is a bold and refreshing take on the complex, numbing heat of the iconic Sichuan peppercorn, balanced by Chamomile Tequila, Campari, Pineapple and Lime Juice.
The Peking Sour puts a vibrant Eastern spin on a timeless favourite, bridging bitter, floral, and tropical notes with a mix of Baijiu, Osmanthus Wine, and Aperol.
Duck Lane Fizz, offers an aromatic and effervescent concoction made with Black Label, Lemon Juice, Soda and Jasmine Syrup for a fragrant finish.
