The week starts off with back-to-back shifts on 3rd – 4th October by Peter Kwok, DMBA’s 2021 Bartender of the Year (North) whose knowledge and experience with Chinese ingredients helps him craft drinks that combine traditional flavours with modern mixology techniques, creating unique cocktails that are rich in Chinese cultural heritage.
